Summer salad with homemade yoghurt dressing

Last week the weather was beautiful so I decided a summer salad was in order! I had been browsing pinterest when I came across a cucumber salad recipe – cucumbers and spring onions in greek yogurt . That sounded yummy but a bit plain so I decided do my own take on it and it was just scrumptious… also goes well on toast! I started by gathering together some summer produce. Mine is very basic – cucumbers, spring onions and cherry tomatoes. But  you can use whatever you want really – I think avodcados or red onion would also go well with this, but if you’re unsure, check out what produce is in season this summer. One thing this salad lacks is lettuce because from time to time, I quite enjoy a salad that doesn’t have lettuce in it – as much as I love it, I feel that sometimes a hearty salad is just necessary!

I decided to use Greek yogurt as the base for my dressing – and kind of just went mad with it. I wasn’t really sure whether or not the flavors would work together well as I’m kind of new to blind cooking but I was pleasantly surprised. I drew on my knowledge of Greek cuisine and kind of used tzatziki for inspiration (just FYI, tzatziki would taste AWESOME with this) I was actually really pleased with how it turned out! Unfortunately, DF couldn’t enjoy this tasty salad – he’s still recovering from oral surgery so food for him is a bit of a no-go. We’ve been on a largely “soft food/liquid diet” recently and it’s really kind of hit and miss as to what he can eat. I thought he could manage this but unfortunately not. I am looking forward to when he is recovered as I miss being able to enjoy a meal with him that isn’t soup or mashed potatoes! But anyway, I hope you enjoy this delicious salad! The directions are so simple!

Summer salad with a homemade yogurt dressing

For the salad –

  • 2 cucumbers (I like mine peeled and cubed – but you can also have them sliced if you like!)
  • 3-4 spring onions, chopped
  • 1 punnet of cherry tomatoes, diced
  • Any other spring/summer produce you like

For the dressing –

  • 1 cup Greek yogurt
  • 1/2 tsp garlic powder
  • 2 tsp honey
  • a squirt of mild chili sauce
  • a squeeze or two of lemon juice
  • salt and pepper to taste

Combine the dressing ingredients together in a small-medium sized bowl. Chop your summer veggies and toss through the dressing. Serve and enjoy!
